By now I would hope you are familiar with the infamous Chipotle. What you may not be familiar with is how sustainable the company actually is. The most obvious way they meet sustainable criteria starts with the food they serve. They use sustainable raised meats and vegetables at most of their locations. Their pigs are kept outdoors and are fed a vegetarian diet to maximize the quality of the pork. The pigs are never fed antibiotics and are said to have lived happier and healthier lives while ultimately creating great tasting beef for the consumers.
As you can imagine, it can be very difficult to continue to source enough food from these local suppliers to meet the demand needs of Chipotle as it increases year to year. Chipotle handles this situation by constantly contacting new suppliers and leaving an application on their website for local farmers to apply to work directly with Chipotle. However, Chipotle is a very honest company in that when in fact a location cannot be supplied with locally grown food, they will tell their customers upfront with a large sign.
Chipotle has also created their own mini-series, called “Farmed and Dangerous”, highlighting the importance of responsible farming practices. Chipotle will host a festival called “Cultivated” which is free to the community and brings people, music and ideas together. They will be located in San Francisco, Minneapolis, and Dallas. The festival becomes a place where health conscious consumers can interact and relax, while seeking inspiration for more sustainable ideas. They will be featuring live bands and famous chefs to attract people to the event.
Chipotle opened the first ever LEED certified restaurant building in Gurnee, IL and plans to continue to slowly open sustainably built restaurants. It received a platinum certification, which is the highest level by the LEED (Leadership in Energy and Environmental Design) rating system. An example of some sustainable aspects of the building design would be that rainwater is collected from the roof and used to irrigate the landscaping. A wind turbine provides 5% of the buildings electrical needs. Inside the building, an energy management system monitors ventilation and turns off lights when it is bright outside.
Sustainability is the future. People are finally starting to realize that the beautiful Earth will not sustain itself with the way we treat it. In order to address this large worldwide problem, it is very helpful to see companies like Chipotle striving to make a difference. It is essential that the company be dedicated to the sustainable choices they make. Not only will sustainable choices yield impressive financial results over the years, but also it is more attractive to consumers.
